There is a lot of documentation and scripts available for the Sphinxes and the Grand Janitor of sphinx, Arthur Chan, is very helpful in most cases.. For most setups Sphinx 2 is faster than 1x Real Time and definitely below 10x Real Time and should not be taking 1 hour for a sentence.. Is there something unique about your task ?
